Week 9: SPICY Southwestern Fettuccine Bowl

It was BEAUTIFUL out today!!!!

It actually got up into the 50s!  Spring is definitely around the corner.

It was so nice to go out for a walk, with the sun shining, the breeze blowing not as harsh, the birds chirping.  Izzy was SO excited.  In case I haven’t mentioned it before, she LOVES her walks!  And good news for her…she got TWO of them today.  We just couldn’t resist getting out there in that grand weather and going for a second walk.

I made this for lunch today.  Let me just preface this recipe with a statement–I have NEVER cooked with chili sauce before.  In fact I didn’t know where it was located in the store.  And I guess I didn’t really know how HOT this stuff is.  Needless to say, by using the recommended amount of chili sauce in this recipe, both Kimm and my tongues/lips were NUMB!  This recipe is very tasty, but this recipe has QUITE the kick.  I will be making this again–I loved the simplicity and short time frame for making this meal, but boy oh boy…a little less heat would be nice 🙂  This recipe was adapted from my fave, Betty Crocker’s Easy Everyday Vegetarian.

SPICY Southwestern Fettuccine Bowl

Makes four servings


8 oz uncooked fettuccine

1 cup chunky-style salsa

1 cup frozen whole kernel corn

1/4 cup water

2 tablespoons chili sauce (this is the original amount…next time I will try 1/2 tablespoon and add more if needed!)

1/2 teaspoon ground cumin

1 can (15 oz) black beans, drained and rinsed

shredded cheese, chopped fresh cilantro, and sour cream to garnish

To make:

Cook and drain fettuccine–for me this was about 15 minutes.

While fettuccine is cooking, place remaining ingredients except garnish stuff in a medium saucepan.  Cook over medium heat until corn is tender (about 10 minutes).

Place cooked fettuccine in a bowl.  Top with about 3/4 cup of sauce mixture.  Sprinkle with cheese and cilantro and sour cream.

We mixed ours all together with the sour cream and it created this super creamy sauce.

We really liked it.  Especially after we could feel our lips and tongues again 🙂

I’m excited because it’s going to be beautiful weather again tomorrow!!
