Good-bye 2012!

It was a good year…I’m sorry I don’t get to properly celebrate you going out in style as I work tonight 😦

But when the clock strikes midnight…I will think of you with only good thoughts…

Snow and Soup

MORE snow!

I would say that we probably got about 5-6 inches overnight.  Kimm and I shoveled the driveway (it was actually SO MUCH BETTER than the last snow…much lighter).  This is the first time Kimm has shoveled since the surgery–she says it wasn’t too bad 🙂  We decided not to use the snow blower because it was so easy to shovel…plus with not being able to take Izzy for a walk with all the ice on the road, I NEEDED a good workout.

After we were done with our house, we looked over and saw that our neighbor’s driveway still had not been plowed.  We knew she hasn’t been feeling well, so we decided to shovel it so that if she needed to get out, she would be able to.  As we were shoveling, her roommate came home and said that she was in the hospital…had been having some trouble breathing last night.  We got in touch with her daughter and turns out that she had a blood clot in her lungs so she’s going to stay overnight.  I really hope that she gets better soon.

Total time shoveling = 1 hour and 15 mins.  Totally drenched with sweat by the time I got in.  While Kimm took a shower did an arm and ab workout and then I hopped in the shower.  It felt SO good!

Lunch was a fried egg and a piece of toast, 1/2 a pear on the side and of course a few pieces of Christmas candy!

Then I got to work on dinner…Tortellini Soup…smells so good!

It’s off to work tonight…I’m crossing my fingers that it goes by quickly.  After two days on, I finally have three off in a row again and I CAN’T WAIT 🙂

Saturday, December 29th, 2012

Woke up this morning and feeling not so great.  A head cold trying to work its way in??  I wouldn’t doubt it as there have been many sick people at work and it’s hard not to catch what is going around.  Not to mention, I’ve been pretty run down.

Good thing I’m drinking some orange juice (in mimosa form of course!)–leftover champagne from our Christmas day.

It snowed again today.  Very beautiful coming down but all I can think of is the shoveling/snow blowing that will take place tomorrow!  At least this time it doesn’t look like the wet/heavy stuff.   It was nice to stay in during it all.  So glad that all my days on for work are corresponding nicely with the snow.  Always a nice thing!

The day was spent relaxing (reading blogs this morning), cleaning (dusting the bedroom and washing the sheets), and financing (determining Christmas spending and paying bills).  And poof like that, the day is close to done.

Looking forward to tonight…we are watching the American version of The Girl with the Dragon Tatoo…last night we watched the Swedish version.  It had been quite a while since we saw either of them and we wanted to watch one followed by the other so we could compare and see which one we liked best.

Chex Mix and some ice cream will be enjoyed snuggled under the blanket tonight.  I hope everyone is warm and happy this evening…

My BEST new Christmas treats recipes: Saltine Toffee Bark and Penuche Fudge

Friday, December 28, 2012

I got some good stuff for you!  Yummy stuff…

I had heard about this recipe through a blog but was a little leery…saltines in a candy???  I’m glad I took a chance because this was one of our favorites this year…Saltine Toffee Bark.  The brown sugar and butter melt together to form a toffee that gets absorbed into the saltines and the saltines give a faint saltiness that pairs SO well with the buttery toffee and the sweet chocolate!

Saltine Toffee Bark

For anyone who has been reading my blog for a while, they know that I LOVE my mom’s Patience recipe.   Problem is, it’s tough to make…particular…it’s very easy to mess up.  I made it successfully in 2010, and then FAILED miserably in 2011.  Which makes me SO not happy, especially considering that recipe takes well over an hour to make, most of it involving constant stirring.  That’s why I am SO PSYCHED to have found this Penuche Fudge recipe from Martha Stewart…it has the EXACT SAME consistency as my mom’s Patience…crumbly and sugary, rather than smooth and creamy.  It was EASILY my favorite Christmas candy of the season 🙂

Penuche fudge

** I doubled the recipe for all ingredients except the evaporated milk–I used the 12 oz that is generally available in the baking aisle–I also made mine nut-free!

BOTH of these sweet treats are being added to our MUST BE MADE list!!

An “Old-Fashioned” Workout

Thursday, December 27th, 2012

Another Christmas has come and gone…:)

It was lovely (I’ll share soon) but now I kind of feel let down…all the build-up and excitement of Christmas went by so fast!!

But now it is on to getting ready for the new year…I have LOTS to do.  AS USUAL!!

Today felt busy even though I know I didn’t do too much.

Coffee and a bagel and reading blogs 🙂 (haven’t really had time to read too many blogs lately so this was VERY nice)

Balancing the checkbook, paying bills, determining how much we saved/went over on our November budget (we went over budget by about $150…not too bad, and yes I’m just now getting that done…don’t even ASK ME about December…that is the task for Saturday…I may need a drink while I do it!)

Guacamole for lunch while watching Will and Grace…a nice break with laughs

Shoveling for an hour…UGH.  That snow we got last night was HEAVY.  I would say we probably got about 3 inches but it started raining during the night and therefore it was very heavy.  I shoveled it all because we weren’t sure if we could snow blow such wet stuff.    So needless to say, I was SWEATING a ton…my clothes were soaking wet by the time I came in.  That sure was an “old-fashioned” workout!

Now a shower and getting ready for work.

Kimm was busy too catching up with laundry!  Back to real life for sure.

Tonight thankfully we will be having leftovers from Christmas for dinner so no extra meal prep for me!  And then to work.  I HOPE this shift will go by quickly.  Thankfully only one night on 🙂

I hope everyone had a great Christmas!!

Sink Fixed…Merry Christmas to Us!

Wednesday, December 26, 2012

$196 later and our kitchen sink is unclogged.

There goes a good chunk of the money I earned in overtime.

Damn carrot peels.

However, we didn’t let that ruin our day 🙂

Today was OUR Christmas…and it was a lot of fun!

Breakfast of bagels and cream cheese, opening stockings, opening presents, lounging on the couch, watching A Christmas Story and later on It’s a Wonderful Life…ahh…this is what Christmas is all about to me 🙂

No place to hang the stockings!!!  The chair always works 🙂

Lots of presents!!!

LOVE seeing the look of excitement on Kimm’s face when she is opening presents 🙂

A very unexpected and GREAT surprise!!!

Guess who has an electric fireplace???

AND Kindles!!!!

We didn’t forget the furry babies!

I think Madeline likes her new catnip toy!

Now THAT’S a treat 🙂

I LOVE Christmas 🙂

Clogged Sink

Monday, December 24, 2012

Ack!!!  Christmas Eve already!

A busy, busy day…

…went grocery shopping

…took Izzy for a walk

…made Chex Mix for Kimm to have with her brother tonight while they watch Christmas movies

…made cranberries for Christmas dinner

…made carrots with a butter brown sugar sauce for Christmas dinner

Even though it was hectic, everything was going okay…UNTIL…

…doing the dishes before going to work and the kitchen sink clogs!!!!

DAMN carrot peels.

I had been putting carrot peels and other food product trash down the disposal and all of a sudden instead of it going down it started draining water up into the sink.

We tried putting a bunch of baking soda and vinegar down to unclog it–didn’t help a bit.

Finally I had to leave for work and the sink remained clogged.

Ugh.  What a thing to deal with on Christmas Eve.

I hope this is not a foretelling of how my night will be at work…

Eggnog Cookies

Sunday, December 23, 2012

Of all the Christmas treats I made this year, the Eggnog Cookies were the most time-consuming.  And that’s only because…they are cookies.  With other stuff, you don’t have to mix up a dough, then load up a cookie pan with the dough, set the timer, check the oven when the timer goes off, possibly add a minute or two and reset the timer, check the timer again, remove cookies from the oven, let cool for a few minutes before taking off the pan…whew!  Multiply times about 8 pans worth!  I’m tired just reading this 🙂

But…the taste was sure worth it!  I love eggnog and I was interested in seeing how this cookie would taste.

My verdict:  Definitely tasted like eggnog, but I could have had EVEN MORE eggnog taste!

I did love how this cookie was a contrast from most of the chocolate based treats we had.

These were ESPECIALLY good when paired with an ice-cold glass of eggnog!

Coconut Graham Bars (or as I like to call them…Almond Joy Bars!)

Saturday, December 22, 2012

I have been making these bars for like FOREVER!

They are so good, IF you are a fan of coconut, which we both are 🙂

If you like Almond Joy candy bars, this Christmas treat is for you!  It’s also one of my favorites because it’s so easy to make…

The combo of graham crackers, coconut and chocolate is DIVINE!!
