Happy Valentine’s Day to everyone 🙂
Another nice, relaxing day.
I made this meal for us yesterday and Kimm is STILL raving about it! She says it’s the best soup she’s ever had. It was really tasty. However, it’s also VERY high in calories and fat, so it’s definitely going to be a “once in a while” treat. But one that we will savor.
This recipe was adapted from a cookbook I checked out from the library…Desperation Dinners. Even though the majority of the recipes were not vegetarian, there were about 10 that I wrote down to try. If they are all as good as this one, we are in for some good eats.
Cheesy Potato Soup
Ingredients (my adaptations):
1 tablespoon butter
1 medium onion, chopped (to make 1 cup)
2 cups boiling water
2 vegetable bouillon cubes
Enough potatoes to make 4 cups small, bite sized pieces (this was about 6 small potatoes)
2 cups shredded sharp Cheddar cheese
1 cup sour cream
1/8 teaspoon black pepper
Peel and chop potatoes. Place in pot and cover with water. Bring to a boil and cook for 20 minutes until tender.
While the potatoes are cooking, chop your onion. Place butter in large pot and melt over medium heat. Add onion and cook until translucent. Dissolve the 2 vegetable bouillon cubes in the 2 cups boiling water. Add to the pot with the onion. Once the vegetable broth is added, bring the pot back to a boil. Stir in the cheddar cheese until melted.
By now the potatoes will be done. Drain them and pour back into the original pot they cooked in. Mash the potatoes up a bit so that some are kind of like mashed potatoes and some are still in chunky bite-sized pieces. Add to the pot with the broth and melted cheese. Add the sour cream and pepper. Simmer 5 minutes, stirring occasionally.
Serve…with crusty French bread is awesome.
We could not stop saying “mmmmm” while we were eating this. So rich and creamy and flavorful.
You should DEFINITELY try this.

Tonight we are planning a low-key night in. We are just going to watch a movie. Have some popcorn. Get to bed early.
Can anyone else wait for winter to end??? I need sun and warmth (I say this as I currently blog with the mini heater blowing at my feet!)
