DETOX {Day 12}

Wow, already the 12th.  Where is this month going?

I had a good night at work last night…a bit hectic from 7:15 am on, but other than that, I can’t complain.


12:15 am — 1/3 smoothie (banana, cherries, cocoa, spinach, almond milk)

4:15 — rest of smoothie, 1/4 cup almonds

Drive home — 1/4 cup cashews, apple

Before bed — spoonful of cashew butter

Dinner — brown rice with salt (a bit bland tasting…need more flavoring), two corn tortillas with onions and peppers baked in the oven, topped with salsa, banana

Snack — will have corn tortillas and salsa

I didn’t sleep very well today.  I got up early and Kimm and I went on a walk with Izzy…it was absolutely gorgeous outside.

We’re a little concerned with Izzy…now she has this other lump that she’s had for a while on her side and Kimm noticed today that it was much larger and Izzy really doesn’t want you to touch it at all…like it’s tender.  So we’re definitely going to have to keep an eye on that and see if it is something that we’ll have to go to the vet for and possibly get removed.  Oh Izzy…

DETOX {Day 11}

First of all…a shout out to my little brother who is turning the big 4-0 today!  Happy birthday Kurt!!   I love you so much.

Second…I am now officially past the half-way mark of my food detox challenge.  Wow.

Last night at work was pretty good, considering by the time the night was over I had been up for about 26 hours with only a 30 minute rest/nap/snooze on the couch with Kimm and Izzy before work.   But I only started to get tired around 6:30 am.  Still no caffeine!

Eats for the day…

4 am — (not too hungry tonight for some reason)…1/4 cup almonds

6:30 am — serving of leftover green beans cooked in olive oil and almonds

Drive home — 1/4 cup cashews, Red Delicious apple

Dinner — pretty much the same as yesterday — roasted asparagus, roasted potatoes, roasted carrots (no salad)…pretty full afterward

During finance meeting — herbal tea (apple cinnamon, decaf…actually pretty good!)

Snack — I’ll be having an avocado and salsa with corn chips again…VERY good…we actually tried the Price Rite brand of white corn chips and boy are they good…better than any store brand we’ve had.

Tonight will make night 2 of 4…then THREE off 🙂 (can you tell I’m excited!)

DETOX {Day 10}

Eeekkk!  5 pm already…WHERE does the time go???

Another day passes by in an instant.

Up by 7 am, walk with Kimm and Izzy, home for breakfast.

Breakfast — smoothie (banana, peaches, spinach, soy milk)…delicious as usual!

Some time on the computer checking a few blogs, then a nice phone call with my parents….already time for lunch.

Lunch — the rest of my black bean soup…especially good today because I’m COLD (still no heat on in the house…we are holding out…temp 64 when we got up, now 68…still chilly), also some hummus with a carrot and a couple of grape tomatoes (I attempted to fix my thick hummus by thinning it out with some more lemon juice and water…it definitely got thinner!  hopefully not too thin…I’m not really sure I’m digging the tahini flavor…I do have a roasted red pepper I’m going to add for the next fix…I’m DETERMINED to make good homemade hummus!), some pumpkin seeds for “dessert”

Watched an episode of The Fosters during lunch…SO good.

Then it was off to do the grocery shopping.  Kimm did the lawn and seeded the new grass by the new driveway…it took her a long time since there were so many stones in the dirt.  We’re both crossing our fingers that the grass comes up.

Dinner — roasted potatoes (with olive oil, salt, pepper), roasted asparagus (with olive oil, salt, pepper), roasted carrots (with olive oil and a dill seasoning mix) (first time ever roasting carrots and they were GOOD!), salad (with spinach, red leaf lettuce, carrots, celery, green pepper, red onion, radish, sunflower seeds with a dressing of olive oil/water/red wine vinegar/Dijon mustard/salt/pepper)…it was a good meal and I was full after it.

Then I had to attack the mountain of dishes that I created all day…seriously…35 minutes to get those suckers done!

Shower and now I’m going to watch Survivor.

Snack — avocado with salt, corn tortilla chips with salsa

I’m REALLY hoping tonight is a good night.

DETOX {Day 9}

I forgot to mention that I got my flu shot yesterday before leaving work.  I was a little apprehensive about it because last year my arm hurt for like 3 days!  However, I have had minimal pain this time, really just a tad sore — this makes me VERY happy.

I feel like I wanted to get SO much done today and although I did get a bunch done, pretty much all of it related to food prep!  It definitely takes more time to eat in a way that you are not used to…lots more thinking involved.

Breakfast:  smoothie

After breakfast I made a half batch of creamy black bean soup and then some hummus.  The soup was really good.  The hummus I think still needs some adjustments.  It tasted great when I took it out of the Vitamix, but then after it had refrigerated it got REALLY thick which I was not a fan of; I did some research and saw that hummus has a tendency to do that so you should make your hummus thinner than you think you want it.  It’s a work in progress!  I also made a loaf of bread for Kimm for this week.

Lunch: bowl of creamy black bean soup, carrots/celery with hummus, 1/2 a peach

My afternoon was GOING to consist of calling my mom, doing some filing, and preparing a food list for this upcoming week.  Instead I napped!  It felt glorious because I was so tired, but then I felt guilty.   I really hate it when I feel guilty about giving in to what my body really needs.  I KNOW I do not get enough sleep on the days that I work, so I know I’m behind and should get some extra sleep.  So I’m going to start just doing what my body needs and NOT feel guilty.

Kimm and I went for a second walk…it was absolutely GORGEOUS out.  A perfect fall day.

After getting back home we made dinner together…Shepard’s Pie (I made mine with a gluten-free veggie burger and also my potatoes only had soy milk added with seasonings…no milk or butter).

Dinner: Shepard’s Pie (it turned out really good), green beans in olive oil with crushed almonds

Snack: it’s going to be the same old thing…popcorn!  (and probably 1/2 a peach)

Starting tomorrow night I have four nights on.  I’m not really looking forward to it but I’m just going to plow through.

DETOX {Day 8}

Oh my last night on at work was a tough one.  The main reason was because I got SOOO tired during the night.  I was working a shift with my co-worker so it just makes it more difficult when I am tired.  I can’t really make a decision to do whatever I want to fight off the tiredness like I would if I was on my own.  The no caffeine was really hard.  I was so, so glad to get home and hop into bed.


12 am — 1/4 of a smoothie

3 am — rest of the smoothie and 1/4 cup almonds

6:15 am — carrots/celery with hummus

Ride home — apple, 1/4 cup cashews

Dinner — leftover enchiladas, banana with almond butter

Snack — popcorn, apple

It was INCREDIBLY nice to have the night off…no rushing off at 10:10 pm to get ready for work!!  We spent the night on the couch watching a few episodes of The Fosters…I’m sad to say that we are almost done with season one.

DETOX {Day 7}

Only one more night of work left!  Actually the past two nights went by fairly quickly and easily…I’m actually getting a little LESS tired when at work than I normally do (at least I think that I am!)  So far no caffeine pills!!

Still loving my Chocolate Cherry Smoothie (aka “THE BLACK SMOOTHIE OF DEATH”  🙂

Okay…here’s my eats…

12 am — 1/3 of my smoothie

3:30 am — rest of my smoothie and the remainder of my rice mixture from the stuffed peppers (prob about 1 cup)

7 am — 1/4 cup almonds

Ride home — apple

Before bed — spoonful of cashew butter

Dinner — ENCHILADAS!!  (very good…definitely will be making again during detox…corn tortillas stuffed with black beans, onions, salsa, sautéed onions, covered in enchilada sauce…I really didn’t miss the cheese that much at all or the sour cream I usually use), for dessert a banana with almond butter (I actually had this last night after dinner too…first time ever trying this blogger favorite and I have to say…I really like it!)

Snack tonight — do I even have to say  🙂 …popcorn and some grapes

Only one more night of work then two off…this makes me happy!  What does not make me too happy is a dark house by 6 pm!

DETOX {Day 6}

First day at work, done!  (and not too bad).  Census is down at the hospital — in fact, ICU was closed due to lack of patients (that RARELY happens).  I think the only thing that bothered me was my left ankle (even though my plantar fasciitis has not healed completely, now I feel like my foot pain is being made worse with some ankle pain that I think may be from how I’m compensating my walking????  SO FRUSTRATING)  Okay, now that I’ve vented on that, moving on!

I tried a new smoothie recipe yesterday and it was GOOD.  Kimm calls it the “black smoothie of death” because of the (awful!) color…it really is almost black…but it tastes SO GOOD!

Chocolate Cherry Smoothie ~~ 1 1/2 frozen bananas, 1/2 cup frozen cherries, tablespoon pure cocoa, 2 handfuls spinach, 1 cup-ish of unsweetened soy milk

My eats at work:

12 am — 1/2 my smoothie

4:15 am — second 1/2 of my smoothie, 1/4 cup of almonds

7:15 am — a carrot with some hummus, 1/4 cup cashews

Drive home — apple


We had our leftover stuffed peppers tonight and poor Kimm…she really just choked hers down!  She really doesn’t like the taste of the filling.  I honestly thought it was not all that bad.  But we are going to re-vamp the recipe and make a more savory, less tomato-y filling…I’m thinking shredded veggie burgers, sautéed mushrooms/onions, brown rice, egg as binder ???  (of course this will all be after the detox when I’ve added back in eggs and gluten!)

After dinner consisted of FINALLY going through our mail holder by the entry way (SO FULL it was overflowing).  I definitely have a lot of filing to do on my next day off…joy.

A quick shower and some computer time and now we are about ready for our snack and an episode of The Fosters.  Of course we’re having popcorn!

DETOX {Day 5}

I have truly enjoyed my two days off 🙂

Today was busy, as usual, but in a good way.   We finally got to take a morning walk together with Izzy…there was sun!  So nice not to wake up to gray and rain.  After breakfast I cleaned the bathrooms (0ne of those dreaded chores that you don’t look forward to doing, but once they are done you are so happy with the results).  And then I was finally able to enjoy my Dancing with the Stars episodes from this week…I loved watching them!  I’m so happy that even without cable I can still watch this show (even though I am always a week behind!…thank goodness no one else I know really watches it so I don’t get surprised with who got voted off).   The afternoon was taken up with our end of the month finance meeting…I was happy to see that even though it was a tough month, we were still able to save something.  Next month should be much better…it’s a five paycheck month and with my co-worker on vacation for two weeks and my picking up extra days, the paychecks will be a little bit heftier!  It was so nice out we took another walk and then cooked dinner together which was SO NICE!  We hardly ever do this and I have to say, I really enjoyed it!  Kimm did what she does best…stir 🙂  Not really, she helped with everything, but it’s an inside joke!  I made her wear an old apron of ours so that she wouldn’t get anything on her clothes…another bad habit of ours…stirring too aggressively.  We made a new recipe to us…Stuffed Peppers…they turned out pretty good…we still want to adjust the seasonings a bit as it was too tomato-y for our tastes.  The best part of the night was sitting down together on the couch and watching The Fosters (still loving that show).

What I ate:

Breakfast — smoothie

Snack — almonds

Lunch — salad, veggies and hummus, grapes, pumpkin seeds

Dinner — one stuffed pepper, spoonful of almond butter

Snack — popcorn, apple

Still feeling okay on the detox…bring on tomorrow!

DETOX {Day 4}

Day 4 done without a hitch!

What a DREARY, GRAY, RAINY day…it was perfect for relaxing in this afternoon, but not so much fun going out grocery shopping in this morning 🙂

Even though the day is done and I feel good about what I accomplished, I feel like I should have done so much more.  But I’m trying to banish those thoughts that tell me what I “should” be doing and actually try to enjoy life a little.

On to the eats…

Breakfast…green smoothie (banana, strawberry, soy milk, spinach)

Snack while grocery shopping…1/4 cup almonds (one snack that I LOVE and will never tire of…ha ha Mom!)

Lunch…approx 1/2 cup refried beans, veggies (carrots, celery, grape tomatoes) with roasted red pepper hummus, grapes, 1/4 cup pumpkin seeds

Dinner…salad with spinach, red leaf lettuce, carrots, celery, radish, red onion, green pepper, sunflower seeds and an olive oil/red wine vinegar/Dijon mustard vinaigrette, roasted asparagus and roasted potatoes, spoonful of cashew butter for dessert (definitely a different nut butter, I’ll give you that…)

Snack for tonight while watching shows…the usual! (popcorn popped in olive oil, apple)

I can’t tell you HOW HAPPY I am not to be going in to work tonight again 🙂  Just happy to lounge around here!

DETOX {Day 3}

3rd day almost done and I feel okay.  Although this morning I was feeling awful.  During the 8am meeting I started feeling very strange…achy, tingly, like I was getting the flu.  I drove home and crawled into bed after taking 2 Tylenol and 2 Vit C.  I couldn’t even look at my phone before I fell asleep (which I normally ALWAYS do), but I just felt so crappy.  I eventually fell asleep, but didn’t sleep all that well.  I was up early to take Izzy to the vet…again.  She has some kind of growth on her rear rump, almost looked like something that could be pulled out, so I tried with the tweezers, with no luck.  But she’s been licking and licking and licking it so much.  The vet said today he’s not sure what it is, maybe a skin tag, but the main goal now is to get her to stop licking the area so it doesn’t develop into a true hot spot or get infected.  Our plan…Tobasco sauce!  (on the hair next to the area, not the actual irritated area).  We shall see how this works.

Snack for tonight…another smoothie, popcorn popped in olive oil with salt

We are really loving The Fosters on Netflix…time to get a few more episodes in!

Big plans for tomorrow — grocery shopping, cleaning the toilets, reading, catching up on DWTS and Survivor.

So HAPPY to have tonight off 🙂
