DETOX {Day 17}

All the days off done…in the blink of an eye!

They were good though…I’m already looking forward to the next two off to get me through this stretch of four days on.


Breakfast — pumpkin oatmeal with cashew butter

Lunch — last of the sweet potato risotto, apple, some roasted pumpkin seeds (2 cups roasted with 2 TBSP olive oil, 1 tsp salt, 1/2 tsp garlic salt, 1/4 tsp onion powder, few cranks of pepper…275 for one hour, stirred every 20 minutes…Kimm is ADDICTED!!)

Dinner — enchiladas (corn tortillas filled with black beans, salsa, sauteed onions, corn…covered in enchilada sauce), raspberries

Snack — white corn tortilla chips and salsa!

What did I get done my last day off…

…roasted pumpkin seeds

…fixed my homemade hummus (added roasted red peppers)…much better flavor!

…grocery shopped at Stop and Shop with Kimm

…went through all my shoes and got rid of 3 pairs of old sneakers and one pair of old flip flops (and yesterday I went through ALL my clothes…got rid of two t-shirts, 1 sweater, 2 sweatshirts, 3 button down tops)…FEELS GOOD to purge


…watched an episode of Family Ties during lunch…wow watching that really brings back the childhood memories!!

…a second walk with Izzy

…got rid of the mums/pumpkins that weren’t looking so hot…not sure why we were having so many problems this year

…washed a butt-load of dishes (x 2)…I tell you, eating healthy creates a LOT of dishes 🙂

Hope everyone has a great weekend…I guess the cold is making it’s way back in this Sunday.
