Who doesn’t love chocolate chip cookies, fresh out of the oven?
I can’t think of too many people who could resist. That’s why I thought it would be the perfect treat to whip up for an afternoon date with a friend of ours that was coming for a visit.
I used a recipe, slightly adapted, from Averie Cooks (her recipe was for Soft and Chewy M&M Cookies…I just wanted plain chocolate chip!…plus I added in more salt since I tend to like salt in my sweets!) I wanted to try this recipe because it promised a soft and chewy cookie due to the addition of a special ingredient…cornstarch!
Believe me, this cookie did not disappoint…Kimm has not been able to stop raving about them 🙂
Soft…chewy…tasty…they really are wonderful!
Soft and Chewy Chocolate Chip Cookies
3/4 cup (1 and 1/2 sticks) butter, room temperature
3/4 cup light brown sugar, packed
1/4 cup white granulated sugar
1 large egg, room temperature
2 teaspoons pure vanilla extract
2 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
1/2 bag chocolate chips (I used semi-sweet)
Using a hand mixer, beat together butter, sugars, egg, and vanilla extract until light and fluffy, about five minutes.
In separate bowl, mix together dry ingredients and then add to butter/sugar mixture and mix until just combined, forming a dough.
Fold in chocolate chips by hand (feel free to taste some of the DELICIOUS dough right now!)
Chill dough for about 15 minutes in refrigerator; pre-heat oven to 350 at this time.
Scoop out 1 Tbsp mounds onto cookie sheet and place 8/sheet.
Bake for 8-10 minutes, until slightly turning brown around edges (middle will still look undone…but don’t despair, the cookies continue to cook a little bit after removing from oven).
Once removed from oven, let cook on cooking sheet for about two minutes, then transfer off.
BEST warm out of the oven 🙂 But still VERY GOOD the next day as we can attest!
All I have to say is that it’s a good thing I got a run/walk in with Izzy earlier in the day after eating a few of these!
