Finally another new recipe…one that I actually remembered to take a picture of!
It was good 🙂
1 medium onion, chopped
1 garlic clove, minced
2 Tbsps vegetable oil
1 can pinto beans, 15 oz, drained and rinsed
1/4 tsp cumin
1/4 tsp chili powder
4 flour tortillas
1 can green chilis, 4 oz
1/3 cup salsa
1 cup grated cheese
Pre-heat oven to 350 degrees.
Place oil in medium sauce pan over medium heat, add onion and saute until translucent, about 5-10 minutes.
Add in garlic and saute until fragrant.
Add in pinto beans and stir, mashing beans with fork until heated through. Add in spices, stir to incorporate.
Mix together green chilis and salsa.
Heat tortillas in microwave for 30 seconds.
Place one tortilla in greased pie plate, cover with 1/4 of bean mixture, 1/4 of salsa mixture and 1/4 cup cheese.
Repeat layers x 3.
Cook in oven for 15 minutes.
Let cool 5 minutes, cut and serve.

The morning was spent cleaning…not necessarily fun, but a necessity.
The afternoon was spent catching up on reading blogs, writing a blog, and going for a walk!
The night was spent watching The Last Unicorn while Kimm watched her hockey game.
