Cheesy Black Bean Taco Casserole

FIRST new recipe of the year!!  And it was a keeper 🙂

Inspiration recipe … Cheesy Taco Casserole

Please enjoy my revised recipe…Kimm and I both loved it!

Cheesy Black Bean Taco Casserole

Ingredients:

2 cups dry brown instant rice, cooked as directed on the package (2 cups dry rice in 1 and 3/4 cup water–bring water to boil, add rice, decrease heat to medium, cook for 5 min covered, then remove from flame, keep lid on for 5 min–done!)

1 large onion, diced and sautéed in 1 tbsp butter until browned

1 can black beans, drained and rinsed well

1/2 cup Mexican shredded cheese

1 cup salsa (we use mild)

1/2 cup sour cream

1/2 package taco seasoning packet (we use Ortega)

1/2 cup Mexican shredded cheese

Directions:

Pre-heat oven to 400 degrees.  Once rice is cooked and onion is sautéed, mix rice, onion, black beans, 1/2 cup Mexican shredded cheese, salsa, sour cream and taco seasoning in a large bowl until well combined.  Spread into a 9 x 13 pan.  Sprinkle with 1/2 cup Mexican shredded cheese.

Bake in oven for 1/2 hour, uncovered.

Let sit for 5-10 minutes before serving.

Serve with lettuce and tomato, or guacamole, or tortilla chips, or sour cream!

Not only is this meal super simple to put together, the seasoning is so flavorful…no salt required…which is something for us…we love our salt 🙂

It’s been quite the busy day.  We took Izzy to get her nails trimmed at 11 am.  Once home we had our financial meeting (I have to say I’m really liking that we are both on the same page now with knowing where all the money is going).  Lunch next –whole wheat English muffins, toasted and the topped with Country Crock, tomato slices and American cheese–under the broiler until nice and toasty–so good!  Veggies and dip on the side.  After lunch we headed out to Bob’s so that Kimm could pick up a new pair of boots after the butter incident yesterday.  Thankfully they had the exact same pair–with her $10 off birthday certificate and an additional 25% off, they were only a little over $17…not bad!  Home again and I spent the afternoon doing paperwork…finally determining exactly how much was spent on Christmas stuff and getting rid of a whole bunch of old receipts I don’t need anymore…felt good to get that done.

That brought us to dinner and now I’m going to catch up on writing my blogs (one down!) and reading before watching a movie tonight…WITH popcorn!  Can’t wait 🙂

BTW…scale has continued to be good to me…down another 3.2 lbs…I honestly was pretty amazed…that makes a total of 19 pounds down since Thanksgiving…THIS IS MY YEAR!!!!
