“WIAW”…Late Edition

Yep, I know it’s Thursday, but I still wanted to do a “What I Ate Wednesday” and since I was working yesterday I didn’t have time to post.  Tonight I have off, so I’m able to post away!

So yesterday, Wednesday…here’s the food…no pics again…bad blogger, but also a very tired nurse!

Breakfast:

Whole Wheat English Muffin with Country Crock (approx 1/2 Tbsp), all natural peanut butter (approx 1 Tbsp) and Polaner All-Fruit Blueberry Jam (approx 1/2 Tbsp)

Butter Toffee coffee with 3 Tbsp Southern Butter Pecan coffee creamer

I’ve been tracking everything on SparkPeople for about 4 days now just to get a sense of calories in and to follow fat, carbs, protein and fiber…it’s a pain to enter information in, but I like the data.  So now I can tell you that the breakfast I have every day has 367 calories, 49 gms of carbs, 10 gms of fat, and 10 gms of protein.  And YES I do measure the coffee creamer…that’s the only thing I measure for breakfast, I eyeball the rest.

Lunch:

Nada…I was sleeping!

Dinner:

“Chicken Parm”–made with 1 Boca soy based “chicken” patty, 1 slice American cheese, 1 0z of spaghetti on the side with a total of approx 1/2 cup spaghetti sauce, 2/3 cup frozen corn with 1/2 Tbsp butter.  For dessert…1/2 a large orange and 2 small squares of a dark chocolate bar that I got from my Secret Santa at work back in December.

LOVE this meal…we have it at least once a week.  The oranges are so good right now…in season and 3/$1 at Price Rite…such a good deal.  And what can I say, I need to end every dinner with something sweet!  As far as stats…dinner had 700 calories (they add up fast!!), 90 gms of carbs, 28 gms of fat, and 26 gms of protein.

Snacks:

String cheese and 28 almonds (eaten at 1:30 am at work)

Large banana (eaten at 5 am at work)

If I eat a good dinner before work then I’m usually not too hungry during the night.  I’m so busy that most times I don’t even have time to think about eating until after midnight.  Now that I’m trying to lose weight I’ll drink two styrofoam cups of water every two hours or so if I remember.  When I’m working I consider my snacks to be on the same day as the rest of my meals even though it’s technically the next day…I do this because I didn’t eat anything for lunch and to me it all works out in the end and is easier for me to mentally keep track of!   375 calories, 38 gms of carbs, 23 gms of fat, and 14 gms of protein.

My grand totals for the day: 1442 calories, 177 gms of carbs, 61 gms of fat, 51 gms of protein, and 21 gms of FIBER!

Not too bad…

Ugh…the last two nights at work were wicked busy…GOOD because the nights flew by, BAD because I felt so behind the entire time…so much to do and then document on…makes for a very stressful night.

Last night was especially bad…I vented to Kimm for about 1/2 hour when I got home!   I didn’t get to leave until 8:15 am and then to make matters worse, there was some kind of traffic hold up on the interstate and it took me 1/2 hour to get home!!!!

But tonight makes it all worth it.  Even though I only have one night off, I get to spend it with the person that makes me happy 🙂  So I am enjoying it to the fullest.   So far we have had a Grey’s Anatomy festival and are spending time catching up on stuff on the computer.  Next…a snack and more Grey’s Anatomy or a movie!    Back tomorrow for two more on…gearing up!
