One day of work done (not too bad) and one day of low carb done.

What I ate yesterday…

Breakfast–(not low carb…I started at lunch)

Coffee with 3 Tbsp flavored creamer

Lite Multigrain English muffin with approx 1/2 Tbsp Country Crock, approx 1 Tbsp all natural peanut butter, and approx 1/2 Tbsp Polaner All-Fruit Raspberry Jam

Lunch (low carb)

2 eggs scrambled in 1/2 Tbsp butter

1 slice American cheese mixed in and then topped with Lawry’s Seasoned Salt

1/4 cup 4% cottage cheese topped with black pepper

1/2 cup pistachios (measured while in the cup)

(Approx 10 carbs)

Dinner (low carb)

Taco salad with greens (salad and red/green leaf lettuce), tomatoes

1 and 1/2 veggie burger with taco seasoning

Approximately 1/2 cup shredded cheese

Ranch Dressing, approx 3 Tbsp

5 strawberries

Approx 1 Tbsp all natural peanut butter

(Approx 13 carbs)

Snacks at work (low carb)

String cheese

28 almonds

celery with approximately 2 Tbsp cream cheese

1 oz cheddar cheese

(approx 6 carbs)

Breakfast this am (low carb)

Approx 2 Tbsp all natural peanut butter

(Approx 3 carbs)

TOTAL = approx 33 carbs.  Considering most people eat many more carbs than that, I’ll consider it a success, even though I know I could try to get even lower if I really wanted.  I’m just hoping (cross my fingers) that this will jump start the weight loss like it did last month.

Well, that’s it.  I didn’t feel too hungry.  I drank tons of water through the night, about 8 cups.

Two more on and then THREE off!!!! (can you tell I’m excited!)
