I’m going in tonight for an extra shift from 11 pm to 7 am.  They caught me at a weak moment!

I guess I’ll be happy when I see my paycheck 🙂

BTW…Kimm and I got new glasses!  I’ll post pictures tomorrow.  Although Kimm noticed a scratch on hers so she will have to return 😦  But at least she only needs hers for distance.

Late Night

I feel kind of strange tonight.  I’m going in at 11 pm instead of 7 pm.  I have to stay later tomorrow morning to learn how to do EKGs.  I don’t think it will take from 7 am to 11 am so I’m sure I’ll get out early.  I hope so.  I’m already tired and I haven’t even gone in yet!  I’m off to take a short nap before work since I got up earlier this afternoon.  Then a shower and coffee will help get me through till tomorrow!

Week 11: Honey Mustard Garlic Vinaigrette

It’s another chilly one here today.  That random warm weather we had a few weeks ago is but a dream at this point.  I’m currently bundled up, but still cold!

Tonight I’m heading to work and I’m going to try to take a nap this afternoon so I figured I would do a quick post now.

For the last few weeks, whenever we have a salad, I’ve been making this vinaigrette.   For a long time I wanted to make my own salad dressing because bottled salad dressings have ingredients that I can’t pronounce and am a little scared to know what they are.  I just want to eat something that I know every ingredient and that is fresh.  That is this. Even Kimm loves it 🙂

Honey Mustard Garlic Vinaigrette

Makes enough for two very large salads

Ingredients:

Approximately 5 tablespoons extra virgin olive oil (I just do 5 glugs)

3 capfuls of red wine vinegar

Approximately 1 teaspoon honey (I just do one squeeze)

Approximately 1 teaspoon Dijon mustard (I just do one squeeze)

Approximately 1/4 teaspoon Kosher salt (I do three large pinches)

Approximately 1/8 teaspoon pepper (I do 10-15 turns of the grinder)

1 large, or 2 small, garlic cloves, finely minced

To make:

Combine all ingredients in a small jar with a tight lid.  Shake vigorously until combined.  Pour over salad.

By the way, we LOVE avocado on our salad.  I remember a time when I really didn’t care for avocado.  Now I wait for it to be on sale and stock up!  Sadly, the salad we had last night was avocado-less 😦  Still tasty though.

Love the mellowness of the olive oil, combined with the tartness of the vinegar, and the sweetness of the honey…

The only other plan I have for today is to make homemade mac and cheese for dinner.

Actually can’t wait to take my shower before work tonight so I can warm up.  BRrrrr!!

Yep, I got WAY behind schedule on the recipe a week!   I guess that’s what happens when you decide to switch to a whole different floor at the hospital and have to be trained.  You kind of revert back to the “oldies, but goodies” that you know you can whip up in a short amount of time.  But that doesn’t mean I’ve given up on my goal.  A total of 52 recipes will be posted this year!  I’m determined.

Anyways, we had a whole bunch of VERY ripe bananas on our counter (this seems to happen frequently–somehow we buy them, with the hopes of eating them, but then they turn too quickly–at least for me…I don’t like a sweet banana when eating raw).  So I did some searching on allrecipes.com and found a recipe for banana cake that I tweaked.  It turned out SO GOOD.  Seriously this is the best banana cake I’ve ever had.  Even better than the Banana Cake Two Ways that has gotten quite a bit of hits on this site since I posted it.   Really–it’s that good.  I did top it with my own brown sugar glaze.   Kimm LOVED it.  In fact she said we might have to get bananas and purposely let them get brown so we (meaning me) can make this cake.

The VERY BEST Banana Cake (with Brown Sugar Glaze)

Makes enough for a 9 x 13 pan

Ingredients:

Cake

6 very ripe bananas

1 cup white sugar

1/2 cup (1 stick) butter, room temperature

2 eggs, room temperature

1 teaspoon vanilla extract

2 cups cake flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

Glaze

4 tablespoons (1/2 stick) butter

1/2 cup brown sugar

2 tablespoons milk

To make:

Pre-heat oven to 375 degrees.

Grease and flour a 9 x 13 inch pan.

Peel the bananas and place in medium bowl.  Mush until very creamy.

In a large bowl, cream together the white sugar and butter until light and fluffy.

Add one egg at a time and mix well after each one.

Add vanilla extract and mix well.

Add mashed bananas to creamed sugar/butter/egg mixture and mix well.

In a separate medium bowl, mix cake flour, baking powder, baking soda, and salt.  Stir to combine.

Add flour to banana mixture 1/2 cup at a time, mixing well after each addition.

Pour batter into 9 x 13 pan and bake for approximately 30 minutes or until cake springs back when pressed lightly and top is lightly browned (this turned out to be 27 minutes for me).

Cool cake completely before adding the glaze.

To make glaze, melt butter in a sauce pan.  Add brown sugar and milk and stir until combined.  Allow to cool for a few minutes to thicken.  Pour over cake and spread evenly.

Can’t wait to have some more 🙂

Happy 71st Birthday Dad!

Today is my dad’s birthday 🙂  He got to enjoy his birthday with a movie (The Last Song–which he said was a real tear jerker!), dinner out (pizza), and CAKE (wish I could have a piece).

I can’t believe he is 71 years old.  Where does the time go??

In other news, last night (my second night off of orientation) was again really busy.  The floor I’m on now is really transitional.  There are four more new nurses coming and not only that we are losing many cna’s who are actually nursing students graduating this semester.  So it seems like we are always short of people.  Which makes for a very busy night.  But I got through it.  No real cardiac issues–just a patient with a blood pressure in the 60s/70s systolically (normal is over 100).  So lots of fluid boluses but it finally came up.

I only got a short two-hour nap this morning because I made Kimm and I eye appointments.  It’s been over a year since my last eye appointment.  Thankfully my eyes have not really changed.  Although she did mention that my left optic nerve is bigger than the right so she did some additional tests (to make sure no early glaucoma).  Everything turned out fine.  I just love my eye doctor…she’s so nice and explains things so well.  I wish she was a regular doctor!

Kimm’s eyes changed of course (it’s been over five years ago since her last eye appointment).  But she found out that she definitely only needs to wear her glasses for distance.  Lucky her!

We both decided to get new glasses.  That was quite a chore picking them out.  It’s so hard to see what you look like in the frames when you need glasses to see!  But we remembered that we had our iphones with us and just took pictures of our favorite frames.  That REALLY helped.  It was an expensive trip.  My glasses will be about $450.  WHOOOAAA.  Kimm’s were about $100 (she got some discount from her insurance–my insurance doesn’t cover anything for glasses which SUCKS).  $450 vs. $100.  NOT FAIR.  I really believe that insurance should cover a basic frame (like up to $100 every two years) and lens if the prescription changes.  I mean we are talking about vision here people.  Seriously.  I completely dislike our health care system.  No wonder old people can’t see well.  They can’t afford new glasses.

Okay rant over.

We had Subway for lunch.  Very good veggie subs.

Then a much needed nap.

After computer time we will be watching some Gilmore Girls and snacking 🙂

I Survived!

I made it through my first night on the telemetry floor on my own.  It was wicked busy for me–started with one patient, then got two admissions and a transfer.  Non-stop.  Not even time to take a break.  It kind of sucks that it worked out that way for my first night.  I think they could have arranged things better on the floor.  There were plenty of nurses that had four patients with no admissions.  Oh well.

And then there was HORRENDOUS traffic on the way home.  It took me twice as long as it normally does to get home.  Had to take a different exit and go the back way.

My feet are KILLING me.

Can’t wait to crawl into bed!

First Day

Tonight will be my first day on my own on the critical care floor.

I feel pretty good about it.  I just wish I would have gotten a little bit better training.  But then again, you can’t make people have issues!  I’m just going to have to keep my eyes and ears open to learn new things every night and also ask other nurses when I have questions.

It’s weird…I kind of feel the same way I did after I got off Med-Surg training.

I’m a newbie again.

The Lovely Bones

Tonight we went with friends to go see The Lovely Bones.

Ummm….

…not so great.

I kind of remember now that I started reading the book a long time ago and then couldn’t finish it because it was so boring!

Oh well.  At least we had a good time catching up with friends.

Not to mention we went shopping today during the day and got some new clothes 🙂  Always a nice thing.

Awww….I can’t believe that I have to go back to work tomorrow.  Why do days off go by so fast??

Whoooooosh!

Wow!  This day just flew by….yep, there it goes…whooooosh!

I went with Kimm to her doctor’s appointment.  That took up the morning.  We stopped and got Iced French Vanilla Coffees at McDonald’s on the way home.  We don’t eat anything at McDonald’s anymore except those iced coffees 🙂

Then we relaxed during the afternoon for a bit–and I FINALLY made a doctor’s appointment for me and eye appointments for both of us!  I can’t wait to get a new pair of glasses!

Later on was grocery shopping and dinner–black bean quesadillas with homemade guacamole!

Kimm rested after dinner while I watched a Food Network Challenge–Food Stylists (you know…those people who make food look good enough to eat in magazines!).  It was so interesting.

Tonight we are watching another movie…The End of the Affair.  Can’t wait.

Homebody

I REALLY like to stay at home.  It’s my comfort zone.  I love how happy I feel here.  I definitely classify myself as a homebody 🙂

Tonight we were going to get together with friends that we haven’t seen in a while, but then they cancelled at the last minute.  So we just had a night of relaxing.

A great meal–veggie burgers on the 100 calorie multi-grain sandwich thins (so good), sweet potato fries (even Kimm likes these when I season them with some olive oil, S & P, garlic powder and cumin–recipe coming soon), and salads with avocado and homemade dressing (again recipe coming soon).  I really am slacking in this whole recipe thing (remember the one new recipe each week!)–I’ll have to catch up this month.

Tonight we are finally going to watch Capitalism by Michael Moore again.  I fell asleep the first time we tried to watch it!  I’ll make some popcorn to go with it.  Can’t wait.

Have I mentioned that I LOVE my days off? 🙂
