Week 12: Roasted Asparagus with Garlic

I’m slowly making my way people. I only need to be at Week 16 by the end of this month to be caught up on my Recipe a Week!

I made this tonight with some in-season asparagus that Kimm’s mom dropped off for us.

It was SO TASTY.  I really love asparagus.  It was a great side dish with a “chicken” sandwich.

Roasted Asparagus with Garlic

Enough for two


One bunch asparagus

Extra virgin olive oil



4 cloves garlic

To make:

Pre-heat oven to 350 degrees.

Take each spear of asparagus and bend–it will naturally break off where the tender and hard stalk meet.  Discard the bottom portion of each stalk and place the stalks with the heads on a cookie sheet covered with tin foil.

Drizzle the stalks with olive oil and liberally season with salt and pepper (I did about three large pinches of salt and about 15 grinds of the pepper).

Smash the garlic cloves and finely chop.  Sprinkle over the asparagus.

Use your hands to mix everything together on the sheet, making sure that all the asparagus is covered with olive oil. Don’t worry if all the garlic is on the bottom of the sheet.

Roast for about 20 minutes total, stirring the asparagus halfway through the cooking time.

Your house will smell divine from the garlic!!

Make sure when you serve it, you get all the little crusty bits of garlic–mmmm!!!
