I have tried another popular blog breakfast/snack item and I am addicted!

What is it????

Thankfully I was able to find these in the “natural” section of our local Stop and Shop, where we usually shop.

I’m not REALLY that big of a fan of cold breakfast cereal so I was a little reluctant to try these, but since so many people rave about them (and I know that Kimm LOVES peanut butter so if I didn’t like them, I was pretty sure Kimm would), I bought a box.  Kimm actually bought a box of Cinnamon Puffins as well (which I have not tried yet).

So, the cereal…how to describe it??  The puffins are big–which is nice.  Sometimes you just really want something that seems filling based on size.  You can have a big bowl and not feel TOO guilty.  The taste is really peanut-buttery!! And they stay pretty crisp, only slightly mushy–just the way I like it.  All in all, SO good.  So good, in fact, that I’ve been bringing it to work now to have for a snack and it holds me over great.  And I really look forward to have it in the middle of the night, and it doesn’t feel too HEAVY like some snacks can.  And more nourishing and filling than another cup of coffee.  And since I can get the milk from the hospital, all I have to do to prepare my snack is pour some into a ziplock baggy–super easy!

So you can IMAGINE how UNHAPPY I was last night when I was unable to have them due to my extremely hectic and busy night at work.  I haven’t had one of those in a long time.  I will not share all of the details but let’s just leave it at this…I really did NOT like being a nurse last night!

So as soon as I got home, I had my puffins!!  And they were WICKED good.   Try them if you haven’t.

Tonight is so nice, just relaxing on the couch with my sweetie.  We are both catching up on our blogs.

It’s that time of year again…

Luckily, I now work with someone who is a girl scout leader so I was able to get some this year.  The winners were: Thin Mints (of course!–my favorite), Caramel DeLites (a close second for me and I believe Kimm’s favorite–love the combination of caramel, chocolate and coconut!), and Thanks-A-Lot (new I believe, but I actually tasted one at work yesterday, very good–shortbread dipped in chocolate).  So these will make nice after dinner treats for a while.

This morning when I came home and was eating breakfast, Charlie was so cute.  He initially came up for some luvin’ like he normally does while I eat my breakfast, but then once the birds started chirping outside the window he was down like a bolt of lightning and took up his “observation post” on the table next to the window where the birds like to gather.


This picture just doesn’t do justice to how cute it was when his little head would go back and forth looking at the birds and his tail would swoosh back and forth!

Just tonight at work and then THREE days off 🙂

Sleepy Monday

Of all the things I did today, sleep took up the majority of my time, and it wasn’t even because I worked last night!  I just felt extra tired, and knowing that I had to work tonight, I felt I should listen to my body and get whatever extra sleep I could.

I got up with Kimm at about 8 am but then went back to bed from 9:30 until 1 am.   I did do the dishes, unpack one bag from the basement, make lunch and eat with Kimm.  And then after she left, I ran to the store to pick up a few essentials (milk and bread) and some stuff for breakfast.  Both Kimm and I have decided that we need to watch more carefully what we are eating, as the pounds are slowly (NOT–more like really fast!!) creeping back on!  So I’m going to try to first eat a more healthy breakfast–either oatmeal or a slice of multigrain bread with fruit or yogurt.  Here were my finds today…


Quaker Old Fashioned Oats (instead of the quick oats…I’m going to try to make the overnight oats that everyone is raving about in their blogs), Columbo plain yogurt (I really wanted the Fage 2% again, but it’s SOOO expensive–almost $2 for a single serving and this was on sale for $2 for the big container–so I’m going to let it soak over a coffee filter in a strainer to make it thicker like the Greek yogurt), bananas, oranges, some pineapple chunks, and a multigrain bread

BTW, I’m sure Kimm is going to laugh when she sees the yogurt!  There is a story, you see.  Whenever I try to eat healthy, I think I should eat yogurt–it’s a healthy food, right?  But I’m usually not a big fan of the tartness of yogurt.  But lately I’ve been sweetening it on my own and it’s much better.  But Kimm still likes to kid me about the yogurt–espeically because one time I said, “Don’t ever let me buy yogurt again!”  This is why I bought the yogurt on my own!  I love having stories like that with someone.  It’s fun 🙂

And I also want to try to start being a little more crafty to keep myself busy so I won’t be so tempted to snack!  So I dug out this cross stitch pattern book and have decided to work on it (it’ll take me quite a while to finish them all I think).


These are all different windows…I just love how they look and I know once they are all done and framed, it will look awesome (somewhere in the house…not sure where yet!)

And then after getting back from the store, it was back to bed for another nap (only about an hour this time).  And now I am getting ready for work.  So all in all, a pretty boring day.  I can’t wait until Wednesday, because then I have three days off in a row.  Even though Kimm and I had a lot of time off together this weekend, I STILL feel like the time goes by WAY too fast!

Birthday Celebration Sunday…

Usually Kimm’s family likes to have us over to celebrate birthdays toward the beginning of the year, since my birthday is January 14th, and Kimm and her dad share a birthday on February 1st.  This year, the day ended up being today!  So around 2:30 pm we headed over to her parents house.  Can I just say it’s so nice driving only 10 minutes instead of over 20 minutes?  Another plus for the new house 🙂

Today we had a BUFFET!!  Always a good choice because there are plenty of options for everyone and you can go back plenty of times to graze if you get hungry.  There was lots of food (Kimm’s mom always shows her love with food–we love her!).  The eats included: cheesy broccoli soup, salad, veggies (carrots, green peppers, cucumbers) and dip, cream cheese stuffed celery, salad, mini buns with either American or provolone cheese, ham and turkey (for the non-vegetarians!), deviled eggs, mozzarella sticks with marinara sauce, chicken tenders (again for the non-vegetarians), cheese puffs and potato chips.  Whew!!  Then for dessert Kimm’s brother bought a whole bunch of sweet goodness–Almond Joy, Baby Ruth, Kit Kat, lemon sandwich cookies, peanut butter cups, sour skittles.  And of course there was cake and ice cream–vanilla cake with buttercream frosting, with either vanilla or mint chocolate chip ice cream. Needless to say, we were all STUFFED in a short amount of time.

We did gifts as well, which is ALWAYS nice.  I received Season 4 and 5 of Reba and Season 4 of Gray’s Anatomy.  Kimm received a bunch of cds and Season 2 and 3 of House.  We have a LOT of TV dvd to watch 🙂  The cards were in a special place…can you see them?

It was a lot of fun seeing everyone again–we hadn’t seen them since Christmas!  Where does the time go?  The afternoon and evening was pretty much spent talking and watching episodes of Cheers.  That sure brought back the memories.  We did a lot of laughing.

Hope everyone is having a wonderful Valentine’s Day with loved ones–significant others, friends, family 🙂

Normally Kimm and I don’t exchange anything for Valentine’s Day, but this year I wanted to do something.  So I broke out my crafty side!  I made her a card and it was a lot of fun!  Then I gave a $50 donation in her name to her favorite animal organization–Out to Pasture, in the name of her favorite animal, Annie, a paralyzed dog that uses a cart with wheels for her back legs to help get around. If you have never heard of this organization, PLEASE check it out.  The woman who runs it, Carrie, is ABSOLUTELY amazing.  If you have even a few dollars to donate for a worthy organization, this is it!

Kimm was so surprised and she said it was the BEST gift she had ever been given!  What an awesome feeling!

Now I’m not really superstitious or anything so hopefully nothing too bad will happen at work tonight :0)

First off, the Larabar Review:

Remember, I had the Pecan Pie flavor (ingredients–dates, almonds, pecans).  Okay, all I have to say is that no way can those three ingredients ever taste like pecan pie!  But, I think the bar is trying more to go for cute names, so it didn’t bother me too much!  The texture of the bar was kind of crumbly and chewy.  The taste was sweet, but not in a fake sugar kind of way–just all natural sweetness.  In fact, this bar actually reminded me of the inside of a Fig Newton.  If I had not had a taste of dates the night prior, I’m not sure I would have recognized the taste.  But for a “health” bar, it wasn’t half bad.  Now, this was sent to me for free.  I’m not sure how much it costs to actually buy.  But if it’s more than a dollar, I probably wouldn’t just go out and buy this for a snack.  There are MANY more things that I like that are healthy, AND cost a lot less.  But if they were on sale, or I received them as a gift, they are not bad.  I would really want to try some other flavors before making a thumbs up or thumbs down on these bars.

Have you ever had a LaraBar and if so, what flavor was it and did you like it?

So we watched Saw V (don’t look if you don’t want to know the plot) last night and it was GOOD (if you like those type of movies!).  Actually I think this was the absolute BEST Saw movie yet.  It made me want to re-watch all the other ones to find the “hidden” connections.  I have to say it was kind of funny watching “Luke” from The Gilmore Girls as one of the main characters.  Kimm and I were on the edge of our seats a good portion of the evening.  And we loved watching them show how they created each trap. Our snack last night was yummy.  Some ice cream.  And not any old ice cream–Ben and Jerry’s Oatmeal Cookie Chunk!


It’s blurry so I’ll let you know what’s in it…sweet cream cinnamon ice cream with chunks of oatmeal cookies and fudge…mmmmmmm!!


Goodness in a bowl!

I finished another book yesterday.  It’s kind of funny because it was a book I had seen somewhere (now I don’t remember where ??) and so I requested it at the library.  And forgot that it’s a Christmas book!  So it was kind of strange to be reading a book with a Christmas theme after the Christmas season.

The title was The Christmas Sweater by Glenn Beck.


I’d rate this book as FAIR.  I did like the message behind the book–that we often don’t realize that our greatest treasures are in front of our eyes because we are always looking for something that we think we “want” or “need” to be happy.  However, the tone of the book was a bit too religious at times for me.  I’m not against religion, I just don’t like it when books become kind of “preachy.”  I think that the message of this book could still have shined through with just a little less chapters that felt like sermons.  But the reading was quick and simple, and told through the voice of a kid (and nothing, even hurtful comments between family members, was left out)–I really like imagining I’m a kid again!  I guess Glenn Beck is a famous radio host or something.  Who knew?  I had never heard of him 🙂

I have to say I didn’t sleep well last night.  Tossed and turned, and woke up several times drenched in sweat.  But I managed to sleep in till 10:15 am!

Today I did a few loads of laundry, put away the Christmas stuff into the closet in the basement, and actually put away some of our stuff from moving that was still sitting around in the basement (three bags worth!).  That actually felt good.

The other thing that I did today, was spend some of my birthday money from my parents!

I have been thinking for a long time what to do with the money I got and today in my inbox I had an email saying that because I already have a purchase of the Davis’s Drug Guide for PDA that I could get 20% off a subscription for my iphone.  I had been thinking of doing this but thought that I would have to renew the subscription every year.  But after reading this email, it said that you only have to renew if you want the newest version.  Since I’ve had the 8th edition version of the drug guide on my pda for a few years I felt I could invest in the newest version (11th edition) for my iphone.  Which I did–for only $39.95.


Now I can just whip out my iphone at work and use that–I don’t have to use the stylus with my pda.  Not to mention that ever since the last time I charged my pda I haven’t been able to utilize the Davis’s Drug guide anyway–it shows all the names of the drugs but when I click on it with the stylus, it won’t open it.  Sometimes I HATE technology!  But it doesn’t matter, because now I have it on my iphone!

I just have to say that I love the fact that it stays lighter out later and later!  That means spring is on its way!!

TWO month anniversary!!

It was TWO months ago that we spent our first night in our new house.  I never thought that day would come so it was so WONDERFUL!  And it seems so hard to believe that two months have gone by so fast.  When I think about it, we really haven’t done too much.  Everything takes so much time.  Which is fine though.  But the upstairs bedroom IS painted and probably by next week we will have our “grown up” MATCHING bedroom furniture 🙂

We still have so many plans–painting every other room, getting our new living room furniture (paying for it first!), adding in accent decorations to all of our rooms, sanding the kitchen butcher blocks, putting in the garden, putting a new driveway in, buying new appliances, and ohhh, soo much more.  But that will all come with time.  Right now we are just enjoying the journey of having a home.

So yesterday for my dessert after dinner before going to work was AWESOME!  It was half a container 2% Fage (really like this stuff…so thick), half a sliced banana, about a tablespoon of honey and then finally, what put it over the edge, was a crumbled up peanut butter bar that I made for the potluck!  Ohhh, soo goood!!!!

For dinner tonight, I made something to use the tortillas that we still had left over from the black bean quesadillas.  So I grilled some Boca chicken patties, cut them in strips, placed them in a tortilla, covered it in mozz cheese and then melted the cheese in the microwave.  Toppings were shredded lettuce and cubed tomatoes.  And I of course had my trusty Ranch dressing to dip!  On the side were curly fries.  It was a good, although MESSY meal!





And in the mail today was…my very first ever Lara Bar (sent to me by Lorrie from The Token Fat Girl–she was sending a few out as part of a contest–which, surpisingly enough, I was one of the winners!)  I am anxious to try this tonight since these bars are ALL OVER BLOGS–I mean LOTS of them.  The flavor I have is Pecan Pie.  And there are only THREE ingredients: dates, pecans, and almonds. Definitely all natural.  We shall see how they taste.  A review tomorrow!

Before last night I had never even tried a date.  But a coworker last night had some dates that I tried…first plain–interesting taste–sweet, with a chewy texture.  But then she did it–she threw some cream cheese on a cut up date and oh yeah, date heaven!  SO GOOD!  Will definitely use that as an appetizer at some shindig eventually 🙂

Tonight the plans are simple.  Watch a movie with my sweetie.  I think we are going to watch SAW V.  Yep, we’ve seen them all.

Spring Fever!

It has been absolutely GORGEOUS outside today!  Right now the temp is 52 degrees!!!!!!  WHOA!!!!  Much better than below freezing temps, that’s for sure.

Not much going on today.  I’ve been pretty boring lately.  I did not make any new meals since I’m going in to work tonight (so Kimm and I won’t be having dinner together).  I usually don’t want to make a new meal unless we get to share it together.  But tomorrow night I have off and I have something already planned.

For lunch was a veggie burger and for dinner will be leftover mac and cheese (and a salad–of course!)

So for today I want to catch everyone up on the two books that I last read.  One was a re-read and the other was a new book.  Both were very good.

The re-read is titled Circle of Grace, by Penelope J. Stokes.


The book revolves around the lives of four friends from college who keep in touch via a journal that travels from each person to the next, sharing what is going on in each of their lives.  However, not everyone is entirely truthful in their entries.  When one of the friends finds out she has terminal cancer, she vows to finally tell the truth to those whom she loves the most.

Seriously, I have read this book probably about three or more times and each time I really feel renewed.  After reading it this time I went to Barnes and Noble and searched for more books by this author and then requested a few of them from my local library.  I hope her other novels are just as “feel good.”

The new book was titled, The Friday Night Knitting Club, by Kate Jacobs.


The book follows the life of Georgia Walker, a single mom who is raising her teenage daughter and running a knit shop in Manhattan.  Of course her life is full of ups and downs, which she shares with her friends who all meet every Friday at the shop to do some knitting and catching up.  As usual, there is a plot twist that eventually has every character realizing that their group friendship is really more like a family.

I originally wanted to read this book because Kimm had found it for her mom for Christmas (her mom loves to knit and has read many fiction knitting books).  So the day after Christmas I went online to the library and requested it!

I have to say, even though I eventually really enjoyed this book, I found it a hard book to “get into” initially.  I think I had to read the first 30 pages twice, to get all the characters straight 🙂  But then I was hooked!

So if you are a reader…check these out!

This Tuesday Has Been…Somewhat Productive

I didn’t really sleep well last night, even though I was pretty tired.  My knee was bothering me.  But of course I was too lazy to get up to take some ibuprofen.  So instead I tossed and turned.  I ended up getting up when Kimm got up at 7:30.

Breakfast was a slice of 10 grain bread with some Mighty Maple Peanut Butter with some Country Crock.  A glass of OJ.  And I also initially had a cup of hot vanilla soy milk flavored with French Vanilla instant coffee.  I have to say I’m not sure how I liked the soy milk.  I didn’t DISLIKE it, it just was a strange flavor for me.  So I will try it again and see if I like it any better.

For a snack, I tried my Fage 2% (the famous greek yogurt that everyone raves about on their blogs).   I had half a container with a sliced up banana and some honey drizzled on top.  Now I am not one for yogurt usually.  In fact, I told Kimm once that she should NEVER let me buy yogurt again.  But I sneaked it into the cart because I really wanted to try it.  And I’m glad I did.  It was thick–which I really liked.  I don’t like runny yogurt.  And by mixing the banana and the honey, the tartness of the  yogurt was very much downplayed.


Wonderful new treat…

I tried to get a lot of stuff done before lunch.  In my mind it was a lot of stuff, but now that I look back on it, maybe it was not!  This is what I did:

–read the Sunday paper

–got caught up on all my blogs!


–did the dishes that didn’t fit in the dishwasher

–balanced my checkbooks

–paid a bunch of bills

–made lunch

–called my mom

–took a nap (WONDERFUL)

–made dinner

–wrote in my blog

So for lunch I wanted to try something new.  I tried a recipe called Crash Hot Potatoes that was originally from Pioneer Woman, but Stacey Snacks highlighted on her blog.

The recipe is as follows:

New potatoes

Olive oil

Kosher salt

Fresh ground pepper

Herbs of your choice

Bring a pot of salted water to a boil.  Add in as many potatoes as you want to eat and cook until fork-tender.  Drizzle olive oil on a sheet pan.  Place potatoes on the oiled pan.  With a potato masher, gently press down on each potato until it is slightly mashed.  Rotate pan 90 degrees and mash potato one more time.  Brush the tops of each potato with more olive oil.  Sprinkle potatoes with kosher salt, pepper, and whatever herb you like.  Bake in a 425 degree oven for 20-25 minutes until browned on top.

Okay, sounds easy enough, right?  Well, you ought to know by now that anything that sounds easy does NOT turn out easy for me.  I started this meal about 1:15 pm, knowing that Kimm was going to be home around 2 pm for lunch.  So I boiled the potatoes (which were actually quite large).  At 1:35 the potatoes were STILL not fork-tender, but I knew I had to get those in the oven by 1:40 at the latest.  What to do???  So I continued cooking them for five more minutes and at that point had to take them out even though the insides were not fork-tender (you could definitely feel resistance).  I placed them on the oiled pan and started to use the potato masher to mash them and you guessed it…those darn potatoes just FLEW off the pan!  Oh man!  Why me!  So I had to RINSE them off and simply cut them up.  I drizzled with more olive oil and salted and peppered (no herbs because we didn’t have any!).  After about 15 minutes in the oven I took them out and was able to mash them more, but instead of the potatoes being in nice little whole parts, it became ONE WHOLE mashed potato!

At about this time (about 1:55) Kimm calls to tell me that she is just leaving work and has to stop at the bank first.  So she won’t be home for another 15-20 minutes.  WHAT??  So I could have actually boiled them longer to get them fork-tender!!!!!  Again, why does this always happen to me?  But regardless, they turned out very good.  I loved how they got really crunchy.  I will definitely try this again, and with some herbs too.  And smaller potatoes.  Because that was the problem.  The potatoes were too big.  Oh well.

For dinner I made Kimm’s favorite–baked mac and cheese.   I have posted this recipe before.  Very easy and down home.

It was nice to talk to my mom today even though she was feeling sick.  Feel better Mom!  My parents are going to come up in May to visit the new house, which I am really excited about.  In fact, my dad is going to help me put in the garden!  Oh, I can’t wait for that.  Fresh vegetables!

Oh yeah, by the way, I did not like the Sex on the Beach drink.  It was WAY too strong.  All I could taste was vodka. So I added more orange juice and cranberry juice, but it still wasn’t the greatest drink.  I definitely will not have that again.

Tomorrow is back to work.  Not sure what my plans are for tomorrow.  We shall see what the day brings.

I have to say I have not done TOO much today.  Mostly sleep (which is what I normally do on my first day off).

So, as promised, here is the recipe for the Peanut Butter Bars I made for last night’s potluck.  The recipe came from The Best of Taste of Home: The First 10 Years (borrowed from the library).

WARNING:  These are NOT low fat 🙂

Chewy Peanut Butter Bars (the TRUE name of the recipe!)

1/2 cup butter

1/2 cup creamy peanut butter

1 and 1/2 cups sugar

1 cup all-purpose flour

2 eggs, beaten

1 teaspoon vanilla extract

In a large saucepan, melt butter and peanut butter.  Remove from heat: add sugar and flour.  Stir in eggs and vanilla.  Spread into a greased and floured 9 x 13 inch pan.  Bake at 350 degrees for 28-32 minutes or until lightly browned and edges start to pull away from sides of pan.

OMG the house smelled so good when these were baking!

When the bars came out I decided to add a chocolate frosting.  Basically just dumped a bag of semi-sweet chocolate chips on top of the bars when they came out of the oven, waited about five minutes, and then spread the chips to a smooth consistency.  SO  good.

With all that DECADENCE I balanced it out with a fresh salad…which to me was better than the bars (in fact the bars to me were FAIR, even though everyone raved about them–I wanted them to be more SALTY–I really like a salty taste to peanut butter stuff).


Just your basic romaine salad mix, chopped cucumbers, and grape tomatoes (which are tasting so fresh right now, very flavorful).  I brought along the sunflower seeds and croutons for people to add and my friend Sarah brought some chickpeas which were a perfect addition.  I had TWO servings 🙂

As far as what everyone else brought, well, I had all the best intentions to take some pictures, but I forgot!  But there was pulled pork sandwiches (which smelled so good and made me wish I wasn’t a vegetarian!), veggie platter, veggie snack sticks with ranch dressing (so addicting), cheese and pepperoni, guacamole chips (very interesting) with store bought guacamole, a pasta salad with tomatoes and olives, and these wonderful mini-cakes with rum soaked pound cake and raspberry filling!  All in all it was VERY delish!  In fact, we liked it so much that we are thinking of doing a potluck like this once a month.  I think that would be nice because it’s nice to just go back and snack and talk with co-workers and really makes the night go by FASTER.  Although I think I ate so much I got incredibly sleepy.  I haven’t been that sleepy ever at work.  I think it’s because I normally just eat a granola bar–that’s it!  And lots of coffee 🙂

Tonight Kimm and I are going to have our first mixed drink with the vodka that we bought.  We decided on Sex on the Beach.  I’m not sure if I ever had one of those so I’m excited to try it.

Here are the ingredients:

2 oz vodka

1 oz peach schnapps

2 oz orange juice

2 oz cranberry juice

Combine all ingredients in a glass filled with ice.  Couldn’t be simpler!  So I will update on how it is tomorrow.

So, my plans for tomorrow include (I feel I need to have some goals for tomorrow)…

Pay some bills (we finally got our electric bill–WHOOAA it was expensive!  it was for 52 days and it was $292–that is so much more expensive than the apartment–I guess the company we have to go with now is just more expensive, and it will take some getting used to)

Make some phone calls to catch up with people

Organize/file by my desk

Read the Sunday paper

Make a new meal

That’s all I can think of right now.  But if I can accomplish all that it will be a good day.

Tonight all I plan on doing is what I titled this blog…RELAX.
