I have to say I have not done TOO much today.  Mostly sleep (which is what I normally do on my first day off).

So, as promised, here is the recipe for the Peanut Butter Bars I made for last night’s potluck.  The recipe came from The Best of Taste of Home: The First 10 Years (borrowed from the library).

WARNING:  These are NOT low fat 🙂

Chewy Peanut Butter Bars (the TRUE name of the recipe!)

1/2 cup butter

1/2 cup creamy peanut butter

1 and 1/2 cups sugar

1 cup all-purpose flour

2 eggs, beaten

1 teaspoon vanilla extract

In a large saucepan, melt butter and peanut butter.  Remove from heat: add sugar and flour.  Stir in eggs and vanilla.  Spread into a greased and floured 9 x 13 inch pan.  Bake at 350 degrees for 28-32 minutes or until lightly browned and edges start to pull away from sides of pan.

OMG the house smelled so good when these were baking!

When the bars came out I decided to add a chocolate frosting.  Basically just dumped a bag of semi-sweet chocolate chips on top of the bars when they came out of the oven, waited about five minutes, and then spread the chips to a smooth consistency.  SO  good.

With all that DECADENCE I balanced it out with a fresh salad…which to me was better than the bars (in fact the bars to me were FAIR, even though everyone raved about them–I wanted them to be more SALTY–I really like a salty taste to peanut butter stuff).

Just your basic romaine salad mix, chopped cucumbers, and grape tomatoes (which are tasting so fresh right now, very flavorful).  I brought along the sunflower seeds and croutons for people to add and my friend Sarah brought some chickpeas which were a perfect addition.  I had TWO servings 🙂

As far as what everyone else brought, well, I had all the best intentions to take some pictures, but I forgot!  But there was pulled pork sandwiches (which smelled so good and made me wish I wasn’t a vegetarian!), veggie platter, veggie snack sticks with ranch dressing (so addicting), cheese and pepperoni, guacamole chips (very interesting) with store bought guacamole, a pasta salad with tomatoes and olives, and these wonderful mini-cakes with rum soaked pound cake and raspberry filling!  All in all it was VERY delish!  In fact, we liked it so much that we are thinking of doing a potluck like this once a month.  I think that would be nice because it’s nice to just go back and snack and talk with co-workers and really makes the night go by FASTER.  Although I think I ate so much I got incredibly sleepy.  I haven’t been that sleepy ever at work.  I think it’s because I normally just eat a granola bar–that’s it!  And lots of coffee 🙂

Tonight Kimm and I are going to have our first mixed drink with the vodka that we bought.  We decided on Sex on the Beach.  I’m not sure if I ever had one of those so I’m excited to try it.

Here are the ingredients:

2 oz vodka

1 oz peach schnapps

2 oz orange juice

2 oz cranberry juice

Combine all ingredients in a glass filled with ice.  Couldn’t be simpler!  So I will update on how it is tomorrow.

So, my plans for tomorrow include (I feel I need to have some goals for tomorrow)…

Pay some bills (we finally got our electric bill–WHOOAA it was expensive!  it was for 52 days and it was $292–that is so much more expensive than the apartment–I guess the company we have to go with now is just more expensive, and it will take some getting used to)

Make some phone calls to catch up with people

Organize/file by my desk

Read the Sunday paper

Make a new meal

That’s all I can think of right now.  But if I can accomplish all that it will be a good day.

Tonight all I plan on doing is what I titled this blog…RELAX.
